Among the treetops of Munkebjerg Forest lies the Treetop Restaurant.

We always focus on local, seasonal Danish ingredients, complemented by the best from abroad, with an eye on sustainability and organic practices.

We forage, pickle, ferment, and preserve ourselves, so our supplies are ready to spice up the hearty vegetables of the cold months of the year. Our goal is to create an intimate, personal dining experience at a high gastronomic level. We love to share the stories behind our dishes, the selected wines, and the thoughtfulness towards nature that guides our work.

Treetop’s kitchen is “new Nordic” with a focus on small suppliers and a sustainable mindset. The menus at the restaurant reflect the season’s selection of ingredients, focusing on craftsmanship, flavor, and aesthetics. Treetop’s kitchen is young, dynamic, and innovative, always evolving with a focus on our guests.

Our kitchen celebrates the local ingredients we carefully select from nearby farms and harbors. Every ingredient tells a story of the earth’s generosity and the farmers’ tireless dedication.

A new menu takes months of preparation

A menu at Treetop Restaurant consists of 10 or 6 courses, accompanied by snacks and petit fours for a complete evening experience.

– This demands creativity and the ability to create harmony between the different dishes. It obviously requires a lot of preparation, and we typically start planning the next menu three months before launch, explains Bjarke Jeppesen.

Typically, four different menus run throughout the year, aligning with the four seasons. Once the new menu is created by the kitchen staff, it needs to be tested, tasted, and adjusted.

– Sometimes, we find that two or three dishes just don’t work in practice. In that case, they are changed. We may also encounter situations where we can’t find the exact right ingredients, and then we have to think of something new. It’s challenging, but also educational. Some things can be changed easily, but there are also processes that take time to alter. That’s just how it is, the head chef emphasizes.

Sustainable Consideration

We strive to only use the best ingredients, grown with respect for the nature we all love and cherish, so that it remains available for many generations to come. We care about animals and animal welfare—it’s important to us that the animals have had a good life, as it can be tasted on the plate. Our fish and shellfish come from coastal boats, and our shellfish are caught in pots, ensuring we consider both the fish, shellfish, and the marine environment.

We take a sustainable approach to protecting nature, and together with our suppliers and producers, we can create unique flavors, high quality, and care for the local environment, all while respecting nature.
