From chinese studies to cultivating vines
EVERYTHING in the production is handmade and hopelessly behind its time. The grapes are organic, if not biodynamic. They are handpicked, stomped barefoot, and pressed using an old French hydraulic press.
Right in the middle of Santa Ynez Valley, Emil and his partner Lars craft handmade wines under the name Aux Mages—wines that are more spiritually akin to the old world than their modern American neighbors.
Originally studying Chinese at Aarhus University, Emil Skytte changed direction due to a deep passion for wine. He pursued WSET’s Advanced Certificate to gain theoretical knowledge and taste different wines.
After working in a small wine shop in Aarhus, a trip to Italy led him to jobs with top winemakers in Barolo. He later worked with biodynamic and natural winemakers in Trentino and California, including the renowned Ryan Roark.
Now, in California’s Santa Ynez Valley, Emil and his colleague Lars produce wine under the name Aux Mages, practicing traditional methods.
They cultivate their grapes organically or biodynamically, harvest them by hand, and vinify them with minimal modern intervention. Their wines, light and elegant, do not resemble typical Californian wines but are more reminiscent of European styles, enhanced by the region’s mild temperatures and coastal winds.
This area, known for its unique geography with a valley running west to east, is among California’s coolest wine regions.
It provides ideal conditions for growing grapes such as Chardonnay and Pinot Noir in the northern appellations, while the southern parts favor heat-loving varieties like Syrah and Grenache. Emil and Lars’ craftsmanship results in wines that are deeply personal, reflecting both their philosophy and the distinctive terroir.
